The bikkie nostalgia continues.

By golly, she’s done it again. Amanda Colligan of Icing Insight, the lass who brought us this giant custard cream cake, has blessed us with another nostalgic biscuit-themed dessert. This time around, Amanda has recreated a pink wafer (the crisp, sugary kind we’d dunk into our cups of milk after primary school every day) in the form of an enormous sponge cake.

The finished product will require a wee bit of assembling, but those who fear fondant needn’t worry – Amanda insists that any cracks or flaws actually add to the wafery effect. Find all the info you need to construct your own here.
