Has anyone noticed that cheesecakes seem to be the rockstars of the baked good world right now? Fruity, vegan, pretzel-topped, surrounded by a pistachio crust – these lactose-loaded lovelies are having their time in the spotlight, and we're fanning out over them in a big, big way.

Our latest scrummy crush comes from food blogger The Gook, who's added a hint of ginger and some coconut for a white chocolate cheesecake with an Asian twist. The polka dot styling is the icing on the cake, as it were, and we've cleared a place in the fridge in preparation to slide some moulds on in.
