Our memories of ice cream cake take us back to parties in primary school, when we’d invite our whole class to huddle around a sparkler-riddled slab of Neopolitan to sing us "Happy Birthday" (while not-so-subtly positioning ourselves away from any boys, just in case the knife came out dirty). This lemon-flavoured concoction is slightly more sophisticated than the one our mums used to grab from the freezer aisle, but the layers of poppyseed ice cream, citrusy sponge and tangy icing are making us just as excited as we were back in the day.
